Aqua what? Aquaponics.

You want to build what? An Aquaponics system? Sure. Go ahead. What is an aquaponics system?

You see thats what I love about Jaden. She is a totally supportive, massive action type of girl. Me on the other hand, I am more of the planning and research type. I will research, double check, learn as much as I can before starting a venture. So when I asked Jaden about building a system here on the homestead, she must have figured I had done all the research and was comfortable with it. And thus the positive support.

Or perhaps its been our track record on things plant related.

First there was a desire for creating a garden for vegetables and herbs. Our previous community prevented us from roto-tilling our backyard into a 20 square foot garden, which led us to Earthbox gardening. It was and is so successful, that when we moved to our new home, it was one of the first request for yard improvement. Read about our Earthbox Garden.

Here is a classic example of the difference between Jaden and I.

Her thoughts on raised beds: Get some wood, build a box and fill it with dirt. Done.

My thoughts: What size beds? Where will they go? How will we get water to them? What type of wood will last in wet Florida conditions? Where can I get this wood? Should we use treated wood or untreated? Make sure theres room for wheelbarrows and carts to go between. Has anyone else already built these that I can look at their plans? It goes on, but I think you get the idea.

Her style leads to more things getting done, usually by putting them on my list of things to do.

And then somewhere along this path, we got some chickens. So well need a place to keep them.

So when it came time for the next addition to our homestead, things went a little differently. They started the same, but ended very differently. She bought the hydroponics kit form kick starter and in usual fashion had assembled it to a somewhat completed state despite leaving the instructions in the box. At which point I heard Honey, this thing doesnt work! And I have to photograph for a post! Which when run through the Steamy Kitchen Translator translates to Scott, can you read the instructions and set this up for me correctlypretty please! Ill even make you dinner!

After setting up the unit and getting it to function correctly, I became curious as to how it is supposed to work. Engineer in me takes over.

Hmmm Hydroponics is the growing of plants in water. That sounds cool. I remember seeing a demonstration garden at Epcot in Walt Disney World in like 1983. Of course then it seemed so futuristic especially to a teenager. Now it just seems a little unnatural. Adding chemicals to feed the plants and having to deal with waste water just didnt sit well with me. So I researched more.

Eventually I came across aquaponics. Instantly I was hooked.

So what is aquaponics?

According to Google Aquaponics is the symbiotic cultivation of plants and aquatic animals in a recirculating environment. Thanks Google for the flashback to high school biology class.

Sounds complicated doesnt it?

Really its not. Think of it this way. Instead of using chemicals to feed plants in a hydroponic system, we are going to use fish to feed our plants. One of the by products of raising fish is ammonia. Ammonia is toxic to fish, if you let too much of it build up in the water, the fish die. Seems no one ever told me that when I had a fish tank when I was ten. Through a nitrification process aquaponic systems convert the ammonia into nitrates the plants can absorb. The plants also act as a filter to clean the water before returning it to the fish tank.

Really its about closing loops. The waste product from the fish become the nutrients for the plants. The plants clean the water for the fish. And the water goes round and round. Simple.

Some people have taken this idea of closing loops to the extreme. Here take a look.

Now all I have to do is convince Jaden we need a breweryso we can feed the fishthat will feed the plantsthat will clean the water and add oxygen to the airthat will help with the tea production.that will fill the biodigesterthat will create methanefor power generationso I can have a chilled beer while I sit in our steam heated jacuzzi.

Prior to 6 months ago, my motto for beans was, love to eat em, hate to cook em! Cooking beans the regular old way requires forethought the night before to soak the beans. But the problem with that is that usually, the night before, Im too full from dinner to even think about what Id possibly want to eat the next day. It requires extreme planning and organization which I just do not have.

Then I learned that you can cook beans in a pressure cooker WITHOUT pre-soaking the beans the night before..

White Bean Chili Frito Pie Recipe Video

Pressure Cooker White Bean Chili Frito Pie Recipe

Servings: 8-10 Prep Time:5 minutes Cook Time:50 minutes
White Bean Frito Pie Recipe

Directions are for either a regular pressure cooker or an EZ Bean Cooker.

Ingredients:

2 cups of cooked ham, cubed
1 red pepper, chopped
2 medium tomatoes, chopped
1 cup frozen corn kernels
1 onion, chopped
1 pound dry white beans, rinsed & drained (Great Northern Beans)
2 cans diced tomatoes with green chiles (look for Rotel brand)
1 envelope taco seasoning
2 cups water

Directions:

Sort beans by removing and discarding any foreign material or shriveled/discolored beans. Rinse beans with cold water. Add the sorted and rinsed beans to the inner cooking pot of the pressure cooker. Add the water and additional ingredients.

FOR EZ BEAN COOKER: Replace the lid on the EZ Bean Cooker and turn clockwise to lock the lid in place. Make sure that the pressure release valve is in the closed vent position. Select the "Great Northern Beans" button on the cooker, then push "Start". Once the cook cycle is complete, use caution to manually release the pressure.

FOR PRESSURE COOKER: Follow the directions included with your pressure cooker. Cook under pressure for 50 minutes.

Chocolate Cake Smores Cookies

In our backyard, we have a fire pit, which really is just a hole in the ground with some arranged bricks around the perimeter to serve as a pretty border (so that you can call it a fire pit and not just a hole in the ground) and tell the kids where the DO NOT CROSS zone is.

Weve made Smores many times, but its a dangerous affair since my husband, a former Eagle Scout learned the proper way to stack fire logs to produce long lasting, intense, big flame, big heat fires. He stacks them like a game of Jenga.

Trying to make Smores in that fire WITHOUT the added bonus of singed arm hairs is almost impossible. The heat of the fire is so intense that you literally have to lay on the ground, crouch behind the stack of bricks to protect your face while reaching in with your non-dominant hand (you wouldnt want to burn off your good hand) holding a stick with a marshmallow dangling off it.

And that is why I love these Smores Cookies. No burning, no singe-ing.

Usually, theres cameras, cupcakes and wine involved. Sometimes, all of the aforementioned inside the privacy of a limo. We party in style! :-)

What I love about Jennys cookbook is that its FUN. Who else would stuff an Oreo inside a chocolate chip cookie?? All of the recipes are family favorites.

You might be wondering, why is the word cake in this recipe? Well, Chocolate Cake Smores Cookies are made with cake mix. Yup, boxed devils food cake mix, whisked with eggs, brown sugar and butter. The batter is thick, just like cookie batter. Then you get to decorate the cookies with bits of graham cracker, mini marshmallows and a mini bar of chocolate.

Oh, and the photos of the Chocolate Cake Smores Cookies? Those are Jennys photos from the book. We made these cookies and by the time I got the camera out, nearly all of them were gone. GONE. I was robbed by 3 hungry kids and a sweet-toothed husband.

Chocolate Cake S'mores Cookies Recipe

Servings: 36 cookies Prep Time:5 minutes Cook Time:13 minutes

From The Picky Palate Cookbook by Jenny Flake.

Ingredients:

One 18.25 ounce box devil's food cake mix
2 large eggs
1/4 cup packed light brown sugar
8 tablespoons (1 stick) unsalted butter, melted
3 1.55 ounce Hersey's chocolate bars, cut into rectangles
1 1/2 cups mini marshmallows
1 1/2 cups roughly chopped graham crackers

Directions:

Preheat the oven to 350 degrees F and line a baking sheet with parchment paper or a silicone liner.

Add the cake mix, eggs, brown sugar and butter to a large bowl and mix until combined. With a medium cookie scoop, place the dough onto the prepared baking sheet, 1 inch apart. Press the cookies to flatten to about 1/2 inch thick. Press a chocolate bar piece, 2 marshmallows and 2 graham cracker pieces on top of the flattened cookie dough. Bake for 11 to 13 minutes, until cooked through. Let cook for 5 minutes before transferring to a cooling rack.

Cod in Garlic-Ginger Broth


Melissa d'Arabian's Ten Dollar Dinners on AmazonI first met Melissa dArabian in Iowa during the winter. Why would a flip-flop wearing Florida gal travel to Iowa in January?

It was a meeting to discuss bacon. I never miss meetings about bacon. Even in Iowa during winter! :-)

On the way home, Melissa and I sat across from each other on the plane.We were so engaged in animated conversation it turns out we both talk not just with our hands, but apparently our entire arms, shoulders and head, too, because we kept bumping into the beverage cart!

Her Ten Dollar Dinners Cookbookcame in the mail a couple of weeks ago and I love her approach to budget meals. Each meal for a family costs $10 or less.

We made the Cod in Garlic-Ginger Broth with Shiitake Mushrooms with a few tweaks. Its light, healthy and the broth is warm and gingery.

Cod in Garlic-Ginger Broth

Servings: 4 Prep Time:15 minutes Cook Time:20 minutes

Dashi is a Japanese broth, used in place of chicken or vegetable broth, and is made of dried bonito flakes and kelp. It's the basis of most Japanese soups, sauces and braises. If you like miso soup, then you'll love dashi, as it's a what's used as the broth base! There are 2 ways to make dashi: the long way and the 30-second way. I choose the easy route - and use instant dashi, which comes in a concentrate form or granules that dissolve in water. Look for dashi in the Asian section of the market. If you don't want to use dashi, substitute with vegetable broth in the recipe.

Ingredients:

1/2 yellow onion, finely diced
1 1/2 teaspoons grated fresh ginger (use a rasp grater)
1 garlic clove, through a garlic press
1 teaspoon cooking oil
2 tablespoons low-sodium soy sauce
3 cups dashi (see note above) or vegetable broth
1 teaspoon lime juice
1 (12-ounce) piece cod, skin removed
8 shiitake mushrooms, stems removed, caps thinly sliced
1 carrot, peeled and sliced into thin matchsticks (or 1 handful of matchstick-cut carrots)
3 scallions (white and green parts), finely chopped
2 tablespoons fresh cilantro, roughly chopped

Directions:

Heat a wok or large saute pan over medium-low heat. Immediately add in the onion, ginger and garlic. Stir constantly and cook slowly for 3 minutes, until the onion is softened and all the aromatics are fragrant. Take care not to burn them!

Stir in the soy sauce, dashi and lime juice. Place the cod fillet in the wok and turn the heat to medium. Cover and let the fish cook slowly, making sure that the broth stays at a bare simmer. Cook for 8 minutes. Uncover and stir in the shiitake mushrooms, carrots and green onions. Cover again and cook an additional 2 minutes or until cod flakes easily at thickest part. Top with cilantro and serve immediately.

Since starting Steamy Kitchen, Ive been making it a point to learn about the people behind the products that I feed my family. Not only is the quality of the product important, but the integrity and goodness of the team is, too. Kikkoman asked me to watch this documentary called Make Haste Slowly: The Kikkoman Creed, which was directed by Academy Award-nominated filmmaker Lucy Walker. The 24-minute documentary tells the story of Kikkomans rich heritage and the family creed that has shaped the company for over 300 years. At first I didnt quite know what to expect from this film, but I was so surprised and interested in all the rich family and company history that they talked about. I want to give you a run-down of the interesting parts so that you might appreciate this company the way I do.

Kikkoman is a family-run company started by a woman at atime when women didnt start companies. It has been in business for 19 generations! The recipe for Kikkomans soy sauce has been handed down along with a family creed, which is a set of 16 guidelines.

Some Interesting Points from the Documentary

  • Kikkoman built the first American manufacturing plant in the year 1973 it was actually the first Japanese company ever in the US! It was interesting to hear about that time period and how worried people were about having Japanese people move in after World War II.
  • Kikkoman decided on Wisconsin for the location of their first plant because of the hard-working labor that was found in that part of the country. The Americans said that they integrated well with their new Japanese neighbors by sharing their cultures with each other including sake and kimonos, tennis and all the bad words in their respective languages!
  • I was amazed to hear about the risk they took by using so much capital to create this plant. It was really sink or swim for them at that time with this US plant!
  • I loved hearing how they make their soy sauce they naturally brew it using no chemicals in a fermentation process that takes 6 months! Theyll test and test to ensure the quality of the soy sauce. Its like checking the health of your children; if you dont take care of them, then they will grow up poorly.
  • The process is involved and lengthy, which is where the Make Haste Slowly phrase comes from.
  • I liked seeing these tasting plates that have to note the color of the finished product, which should be reddish brown, and when the circles on the plates appear purple through the sauce, then its the right color.
  • The soy sauce is said to have all five tastes of salty, sweet, bitter, sour and umami (sort of like savory) and the deep aroma of the soy sauce takes it to a whole other level!
  • My favorite part of this was when a woman from the laboratory was describing the flavor of Kikkoman soy sauce. She said something to the effect of: Naturally brewed soy sauce has over 300 elements that produce its unique flavor and aroma. Chemically manufactured soy sauce has very few aromas and is very flat. In this way, great soy sauce, like Kikkoman, can be compared to a fine wine. The more complex the flavor, the higher the quality.
  • Then she said, Soy sauce goes so well with so many foods because the natural flavors and aromas are similar to those in other foods. And then she said that soy sauce goes great with ice cream because of this! Wow, Im interested to see if thats true for my own tastebuds!
  • There is a special house for making soy sauce for the Emperor, and the Imperial Household Agency picked Kikkoman as the producer what an honor!
  • There was a profile of an industrial designer who designed the first small bottles of the sauce. He remembers seeing his mother struggle with the heavy old bottles that everyone used to keep under the sinks in Japan. So he made them smaller, hand-held and in the shape of a water droplet, so it doesnt drip when you pour it. Functionality at its best!
  • Soybeans and wheat dont have any taste when you put them in water. It seems mystical that it takes on such a deep aroma. Before we understood the scientific properties behind fermentation, it was believed that spirits did the work to create this sauce.
  • My other favorite part was when they described the sustainability of the soy sauce industry. They explained that it is a very environmentally friendly process for the environment. The only things left are soy cake (used as animal feed) and soy oil, which is used to lubricate the machines! Our company has been in business for hundreds of years. The reason weve survived so long is that we wanted to prosper along with society.

This past month, Ive been to no fewer than 6 different bookstores which is actually a difficult feat considering I live in a small town and all the local bookstores have closed (sob) actually, 4 of the bookstores were large airport bookstores (another sob I dont care much for traveling during the holiday season.) At each store, propped up front and center is Debs (Smitten Kitchen) cookbook.

I love that the book features Debs strangely comforting black/white mottled countertop design. Not that the countertop is strange, but its strange that Ive followed Deb for so long now that I feel warm-yummy every time I see her blog photos which always is set on her kitchen countertop. Do I want to snuggle up on her kitchen counter? I might just, given the chance. Hmmmm..strange, right?!

When I got the book in the mail, the first recipe I flipped to was Salted Brown Butter Crispy Treats rice krispy treats made with nutty browned butter?! Debs hallmark sweet treats are balanced with healthy recipes like Vermouth Mussels with Tarragon Oven Fries. In simple terms, its a book filled with recipes you actually want to cook. Big Breakfast Latkes (shredded potato/onion latke with sunny side up egg on top) would be perfect for weekends, vegetarian Ratatouille Sub is belly warming, and of course, Kale Salad with Cherries and Pecans carries all the crunch, sweetness that you could ever want in a salad.

Kale Salad with Cherries and Pecans

Now, about that salad..We grow kale every year in the garden, its just now starting to get big enough to harvest the leaves. Kale is super-easy to grow, and its one of those plants that you can harvest leaf by leaf just pluck enough for the salad.

Most of the kale recipes that I see are for cooked kale (see Caribbean Kale & Bacon or Kale Chips(try them!), so get really excited to see kale salad recipes oh yes, try this Kale & Cauliflower Salad thats one of my all time favorites.

Debs recipe forKale Salad with Cherries and Pecans features frilly crunchy (healthy!!) raw kale, creamy goat cheese, tart dried cherries, crunchy pecans and paper-thin slivers of radish. The variety of flavors, colors and textures that you experience in this salad is what brings me joy.

Kale Salad with Cherries and Pecans

Ingredients:

FOR THE SALAD
1/2 cup pecans
8 ounces Black Kale, also known as Cavolo Nero, or Lacinato, Dinosaur, or Tuscan Kale
4 ounces radishes, sliced into paper-thin rounds
1/2 cup dried cherries
2 ounces soft goat cheese, chilledFOR THE DRESSING
3 tablespoons olive oil
1 1/2 tablespoons white wine vinegar
1 tablespoon smooth Dijon mustard
1 1/2 teaspoons honey
salt and freshly ground black pepper to taste

Directions:

Optional step: Preheat oven to 350 degrees F and spread the pecans on a tray. Toast them for 5 to 10 minutes, tossing them once or twice to make sure they toast evenly. Remove them from the oven and set them aside to cool.

Wash your kale and let it dry on spread-out kitchen or paper towels. Then, with a knife, remove the rib from each stalk, leaving long strips of kale leaves. Stack the leaves in small batches, roll them tightly the long way, and cut the roll crosswise into thin ribbons. Add the kale ribbons to a large salad bowl.

Add the radishes, pecans and cherries. Crumble the goat cheese over top.

Whisk dressing ingredients together in a small dish, and pour the dressing over the salad.

NOTE: This salad is great to eat right away, but even better after 20 minutes of tenderizing in the dressing.

For 2013: Make a Memory Jar

This idea was so popular last year that Im reposting it again! Happy New Year everyone! Jaden

I always say that time goes by too fast. Every. single. year. Other than this blog, I dont keep a family journal (lazy at writing with a pen and too shy to spill all our personal family stuff on Steamy Kitchen), so every year, Im always stuck with wondering, what happened this year?!?

Of course, all the big memories are never forgotten, but its the little joys, the teensy things that tend to get forgotten. This year, weve started a new tradition to do just one thing remember the little joys all year long ina memory jar. Those who follow Pinterest may have seen this too!

Memory Jar

We keep this vintage pale blue canning jar on the kitchen counter with a stack of colorful paper and a marker. Every few days, one of us will jot down something that made our family laugh or smile. On New Years Eve, well be emptying out the jar, unfolding each paper and reading them one by one.

Next year, a new jar to begin again and the best part is we can bring out past jars anytime to remember the little things that shaped our lives.

A memory jar is more fun than a journal as anyone in the family can contribute to it. The best is when one of us secretly writes memory and quietly slips it into the jar. I cant wait to read some of the notes my kids have written all year long.

Inside the jar, we also keep little silver trinkets and charms. Sometimes one of us will have a bad day, need a little extra reminder for compassion or a good luck charm on a spelling test. These are little enough to put into your pocket to serve as a extra oomph of support for the day. We used to have a small heart too I carried around the small silver heart one day and ended up giving it to a stranger I came across, who needed a little love.

The charms are indeed magical and I encourage my kids to give them to a friend or stranger who could use a bit of magic.

Vintage mason jar quart size: you can find these oneBayor Etsy. Try to get one with a lid so you can store each years memory jar on a shelf. The photo below is from Mason Galore on Etsy.

The colorful notepad is from Staples even though it looks like a Post-It note, there is no sticky backing. Just a pretty spiral of colorful paper. $3.79 for 600 sheets.

You can also use scrapbook paper and cut them into 4x4 squares. I love the ones that come in a giant pad from Michaels.

The silver charms were bought at a local gift shop near my home. There are so many gorgeous handmade ones on Etsy: sterling silver wishbone, faith angel wing, dragonfly word charms, copper pocket heart.

Another great idea I picked up from Pinterest (are you addicted as much as I am?) is to create a memory box full of index cards. Each card is stamped with Month and Day. Everyday, write a one or two liner of something that happened that day or a wonderful little memory. The key is to keep going year after year, writing the next years memory on the the next line on the same card. So everyday, youll be able to see what you did each year on that day.

While were at it, here are a few more ideas that I plan on incorporating in the near year. I have way too many photos, but unfortunately, all of them are either on the camera or on my hard drive. Theres just no excuse not to display them.

Printing is easy, its the framing thats tedious. Heres a great idea that uses an empty frame, wire and clothes pin. Its so easy to change out photos and put up new ones.

I probably take more photos with my phone than my camera.Sticky Gramturns your Instagram photos into magnets. How cool. I havent used their service yet, but I certainly plan to. Turn your refrigerator into a memory board! We have a massive magnetic dry-erase board in the craft/homework room, which will be perfect to display the photos.

Art

The kids artwork that comes home from school normally gets displayed on the magnetic dry-erase board (Im not a fan of sticking stuff on the refrigerator) but after seeing these ideas, Im going to have to change it up! The kids artwork are masterpieces and should be displayed for everyone to see!
