Beef Satay Skewers with Habanero Peanut Sauce

Beef Satay Habanero Peanut Sauce Recipe

During recipe testing, there was an unanimous MMMMM!!! along with what may have been a little happy-dance from yours truly. This is hands-down, the very best Beef Satay Ive ever had. And its from a Belizean cookbook called, Flavors of Belize.

Beef Satay Skewers with Habanero Peanut Sauce

I actually had to look up exactly where Belize was located when I started reading this book. Its Central Americas Gateway to the Caribbean hugged by Southern Mexico, Guatemala and Honduras, on the Caribbean side. When I first opened up the book and saw recipes from Southeast Asia, China and even Hawaiian flavors, I was intrigued. Of course, if I had read the subtitle of the book, Ancient History, Diverse Culture, Exotic Cuisine it would have made sense!

Beef Satay Skewers Recipe

It also turned out that my friends Adam Pearson and Matt Armendariz styled and photographed the book. Needless to say, the book is gorgeous, though I would have loved to see more photos of Belize, its people and markets. Ive got 2 videos to share with you one is a book tour and the other is the how-to on the recipe.

Beef Satay Skewers with Habanero Peanut Sauce

As a side note, I remember when I was little, probably around 10 years old, my Uncle Billy told me he was going to be vacationing in Belize. That struck me as incredibly exotic and so glamorous. When I grow up, one day Im going to be glamorous and vacation in Belize too! Well, I havent made it there yet, but perhaps one day. The closest Ive gotten is Cancun, but somehow the 5 hours or so drive between them seems like a world of difference. In my mind, at least.

Flavors of Belize, The Cookbook Book Tour Video

About the Book Tour: While I am a devoted customer of Amazon.com, the shopping experience just isnt quite as fulfilling when browsing for books. I love thumbing through the pages of a cookbook, stopping at a random page to see what Id find. If at least 75% of the time, my thumb stops at an interesting recipe, photo or snippet of text, then its a win. So I thought Id start giving some informal Book Tours of cookbooks that I have, majority of them sent from publishers for review.

Ill give you a few quick thumb stops of the book I hope you enjoy!

Chicken Salad with Sesame-Miso Dressing

Chicken Salad with Sesame-Miso Dressing Recipe

I first met Nancy Hachisu in Mexico at our very first Food Blogger Campthat a few of us hosted back in 2010. What surprised me was not that she attended, but that she flew all the way from Japan to come and hang out with us. It gave me kick in the pants, You best deliver a killer event, Jaden! And we did, because she came back the following year.

Ever since then, Ive been lucky to see Nancy at least once a year, sometimes twice, at food conferences. Those conferences are like reunions for us bloggers giddy hugs, wine glasses clinking and catching up in person on all the exciting things happening.

Nancy has been working on her very first cookbook for the past couple of years. I remember in Seattle seeing her very first cookbook photos shot by a famous Japanese photographer over lunch. Im proud to say that her book, Japanese Farm Food, has just come out.
Nancy, a native of California, traveled to Japan and fell in love with an organic farmer. They married and now run an English immersion school at their rural farmhouse. Thats the 2 sentence version of their love story, and I hate to tell you more because you really should read the wonderful story that Nancy has written in the book.

Adapted from Nancy Hachisu's Japanese Farm Food Cookbook.

If you cannot find thin sliced chicken tenderloin, purchase skinless, boneless chicken breast. Place breast between plastic wrap and pound thin with the smooth of the meat tenderizer to thin it out to 1/2" thick.

Ingredients:

1 pound, thin sliced chicken tenderloin
2 tablespoons sake
2 teaspoons grated ginger
1 tablespoon low-sodium miso paste or 2 tablespoons Miso & Easy
1 teaspoon sea salt
2 small heads of butter lettuce, leaves torn

FOR THE SESAME-MISO DRESSING

2 tablespoons sesame seeds
1 tablespoon low sodium miso paste or 2 tablespoons Miso & Easy
2 tablespoons rice vinegar
4 tablespoons rapeseed, grapeseed, rice or olive oil

Directions:

Turn oven to broil (high) and place rack 8" below heating element. Slice the chicken breast into thick strips. Combine the sake, ginger, miso and salt. Toss the chicken strips into the mixture. Place chicken on a baking pan. Broil for 8 minutes or until chicken is cooked through.

In the meantime, add the sesame seeds to a frying pan and roast over medium-high heat while shaking the pan to avoid burning the seeds. When the seeds start to pop, remove from the heat.

Reserve 1 teaspoon of the toasted seeds and set aside.

For the dressing, slide the remaining seeds into a Japanese grinding bowl or mortar and grind roughly. Mash in the miso to form a thick paste and add the vinegar to lighten (and brighten) the miso-sesame mixture. Whisk in the oil slowly until emulsified. (Be sure to whisk again right before dressing your salad.)

Toss the lettuce with the dressing. Place the chicken on top of the lettuce and sprinkle with the reserved toasted sesame seeds. Serve immediately.

Awkward

Ive always been a hands-on and visual learner, preferring to process information by seeing and tactile practice. Even in grade school, I remember my teachers always complaining, Are you listening to me? (no.) Did you hear what I just said? (nope.)

In college, where the preferred method of teaching was mainly lectures, Id write notes fast and furious (I created my very own shorthand and was good at deciphering my own chicken-scratch), often scribbling word-for-word what the professor was saying. Then, to study, Id re-copy all of my notes 2 or 3 times by hand. Back then, laptops were silly-expensive and I relied on my Bic pen, spiral notebook and lots of bandages to cover blisters on the sides of my third finger.

[Oh, and by the way, both my boys are the same way - they learn by, "Show me, Mommy!" or "Lemmee try!"]

This is why I had never gotten into audio podcasts. Its just too much listening to people talk. Stuff that I hear goes in one ear and just falls right back out.

Recently, I finally learned how to connect my iPhone to my cars speakers via Bluetooth so that I could take phone calls through the car instead of holding onto a phone. Im short, Asian, female and suck at driving. I really do need both hands on the wheel. The problem with calling through the car stereo is that the microphone in the car is somewhere NOT NEAR MY FACE. Its on the dashboard, behind the windshield wiper lever, near the air conditioning vent.

So if the other person Im talking with has trouble hearing me (like all the time), I have to turn off the A/C or heater, lean forward and speak loudly, enunciating EACH. IN-DIVID-UAL SYL-LA-BLE. Which is even more distracting than if I had just held the damn phone in my hand.

Ive tried the Bluetooth headset route, but its just too staticky and the phone gets all confused about which Bluetooth device to connect to the car? the headset? and I kept dropping the call.

Ive resorted to plugging in my ear buds to the phone and only using one of the buds in my ear. I can hear much better, but since my ear bud doesnt have a microphone, I have to prop my phone up on my chest, using my boobs as a sticky shelf (pushup bras help with that) and propping the microphone close to my mouth. Awkward.

Hmmm..

This post originally was supposed to be about podcasts. Somehow Ive digressed and now you know I play with my boobs in the car. Double awkward.

Pumpkin Mashed Potatoes Recipe

Pumpkin Mashed Potatoes Recipe

I dont cook with canned pumpkin nearly enough, it seems most cooks only use it for making pumpkin pie, but since Im not a pumpkin-pie-kinda-gal (not everyone is, right?) the canned pumpkin rarely ever makes it into my cart.

Well, 2 weeks ago, it finally did. I dared myself to make something with it and if you can just imagine me at the grocery store, pacing around and around with a can of pumpkin in my hand, mumbling to myself (I justdare you, Jaden,double-dare!), youve got the right mental picture.

Pumpkin Mashed Potatoes Recipe

I read somewhere recently (I know, so very specific, right?) I just dont exactly remember where but somewhere out there in the internets about people who dont like to mess with mashed potatoes. No shaved parmesan, no truffle oil, no stir-ins or sprinkle-ons. Just plain ol mashed potatoes..which is TOTALLY fine by me, but potatoes deserve to have a little fun too, right?

Pumpkin Mashed Potatoes Recipe

I settled on pairing pumpkin with mashed potatoes and added ground ginger, cinnamon, nutmeg and clove. Of course, butter and a bit of heavy cream as well. Kelly and I tasted the pumpkin mashed potatoes and decided that it needed more.

We added maple syrup for a tiny hit of sweetness. But the flavor was still flat. Normally, that means its missing umami and when cooking Asian dishes, I reach for soy sauce, fish sauce or miso paste. For non-Asian dishes,Worcestershiresauce, anchovy paste or demi-glace.

Pumpkin Mashed Potatoes Recipe

After rounds of testing, miso paste was the winner. I know it may sound a little strange to add miso paste to mashed potatoes but dont tell that to one of the most famous restaurants in Las Vegas! (Heres my recipe for Miso Mashed Potatoes)

Surprisingly, miso paste added the richness and savoryness that the recipe had lacked. It helps pull together all of the flavors warming spices, sweet maple syrup, creamy pumpkin.

If you dont have miso paste, try 1 teaspoon ofWorcestershireSauce in its place.

By the way, this makes a perfect side dish for Thanksgiving or Christmas dinner!

If you have Miso & Easy, use the regular flavor! If not, any regular or low-sodium miso paste is perfect. If you don't have miso paste, substitute with 1 teaspoon of Worcestershire Sauce.

Ingredients:

2 1/2 pounds potatoes, peeled
2 tablespoons butter
1/4 cup heavy cream
15 ounce can pumpkin
1/2 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/8 teaspoon ground nutmeg
1/8 teaspoon ground cloves
2 tablespoons maple syrup
2 tablespoons miso paste
1/2 teaspoon salt
freshly ground black pepper
minced fresh chives or parsley (optional)

Directions:

1. Put the potatoes in a large pot and cover with water. Bring to boil, turn to heat to medium-low and cook potatoes for 20 minutes or until you can easily pierce with a fork. Make sure when you cook the potatoes, that the water is a very low boil (a bubble burp every couple of seconds) - a big, rolling boil will make your potatoes mushy. Drain water.

2. Mash the potatoes. Mash and stir in the remaining ingredients to the mashed potatoes until smooth. Taste and adjust seasonings if needed.

Disclaimer:Ive been developing recipes using miso paste for Miso & Easy, the makers of ready-to-use miso paste. See all of the recipes Ive developed for them!

My hens are teenagers

This summer, our little itty bitty baby chicks that arrived in April began laying eggs. It usually takes about 6 months before chickadees develop into egg-layers, and like an impatient mother, I kept looking in the coop twice a day to check if my babies were growing right.

Well, grow they did! And fast, too these kids spend most of the daylight hours scrounging for food on the property. Those bugs must be nutritious! We also feed them Black Soldier Fly Larvae (I know, it sounds gross, right?)

This little gal, who used to look like:

Grew up to be a gorgeous soft orange-yellow hen. Shes a gentle giant and her feathers are so soft and fluffy. Shes like a giant pillow. We had originally named her Nugget but it seems a little cruel now, since shes my favorite. Nugget will just hang out in your arms and be content as long as youre feeding her bugs.

This oneis one of the most timid of the flock. Heres her baby pic:

She surprised us all turning into a 5-toed, speckled, feather-footed hen with fluffy earmuffs that sometimes blocks her view and she runs into stuff sometimes.

Ack! I cant see! Someone trim my puffy muffs!

Look at her feather covered feet. So funky!

Spotty, who looked like she has a mask on.

grew up to be a Sicilian Buttercup with a large, wobbly buttercup shaped comb that flaps around when she waddles. Poor thing is the smallest and gets picked on by the others. I want to put little spurs on her legs so she can at least defend herself!

Weve been keeping them in the coop the past few weeks as I just planted my winter garden and the hens LOVE LOVE LOVE to eat the baby seedlings, especially lettuce.

They are not too fond of Buster, our 5-month old puppy, though. Anytime Buster or Coco are near the coop, the hens will freak out and go hide upstairs.

Every egg is precious, we collect them in the late afternoon.

A few days ago, one of the hens laid a strange egg. A normal egg is on the left, and the one on the right was really rough and scratchy. The inside of the egg looked just fine. Tasted just fine too :-)

Any hen owners know what caused this? We only saw one egg like this, and ever since all eggs have been normal.

Thai Seafood Curry Recipe

Thai Seafood Curry Recipe

This is one of my go-to dishes when Ive run out of time, have barely any fresh ingredients in the house and in need of a spicy fix. Thai curry only takes 15 minutes to make, from start to finish, including the rice if you use my microwave method.

Thai Seafood Curry Recipe

The recipe is crazy flexible use whatever seafood youd like I happen to have a bag of frozen bay scallops in the freezer and a couple of bell peppers. The Thai curry paste and coconut milk both are from a can, the rice from the pantry.

Thai Seafood Curry Recipe

Oh yes, the rice! Its actually a blend of quinoa and jasmine rice. All you need to do is stir in a couple of spoonfuls of quinoa grains to the raw rice and cook them together.

Thai Seafood Curry Recipe

The boys LOVE rice, but arent big fans of quinoa but its so healthy for them that I mix it in (sorry, boys!)

Thai Seafood Curry Recipe

The Thai basil is from my garden, but you can use regular fresh basil that you can find at the market. Or leave it out if you dont want it!

Thai Seafood Curry Recipe Video

Ive been busy creating videos for each recipe it doubles the work required in creating recipes, but I think the video is worth it. Generally, from start to finish, a recipe now takes me and my team 15 hours.

If youre curious, Ill have to detail out what we do step by step in recipe development and publishing soon!

Thai Seafood Curry Recipe

Servings: 4 Prep Time:5 minutes Cook Time:10 minutes
thai-seafood-curry-recipe-featured-9615.jpg

This Thai Seafood Curry Recipe only takes 15 minutes to cook. You can cook the rice in the microwave (see link in the recipe below) while you cook the curry on the stovetop.

Ingredients:

1 1/2 cups rice
1 teaspoon cooking oil
4 ounce can of Thai curry paste
14 ounce can of coconut milk
1 tablespoon fish sauce
2 bell peppers, thinly sliced
1 pound seafood: bay scallops, shrimp, fish, etc.
sprig of fresh basil, leaves torn

Directions:

1. Cook the rice according to package instructions. Here are my instructions for how to cook rice in the microwave.

2. In a wok or saute pan, heat up the cooking oil over medium-low heat. When shimmering, carefully add in about half of the curry paste and stir for 15 seconds to release its flavors. Whisk in just 1/4 cup of the coconut milk until the curry paste is fully mixed in. Pour in the remaining coconut milk, turn the heat to medium-high and bring to a simmer.

3. Whisk in the fish sauce and taste. If you'd like it more spicy, add in more curry paste. If the curry needs more flavor (not necessarily spice), add in additional fish sauce.

4. Add in the bell peppers and the the scallops. Simmer for 4 minutes or until the scallops are just cooked through. Turn off the heat. Stir in the fresh basil. Serve over rice.
